Better yet, got a husband who's not the eat-a-tomato-like-an-apple type?
I'm sharing my personal home-made recipe for delicious, rich tomato sauce!
*Note: I never use measurements, so the following is an estimate.
Jackie's Saucy Tomato Sauce
Makes approx. 5 cups of sauce
In medium saucepan cook...6 Large Tomatoes, cut in chunks (recommend Big Boy or Beefsteak)
1/2 cup Chicken Stock
1/2 cup White Wine (the cooking variety :o) **Note: if you skip this key ingredient then it's not "Jackie's Saucy Tomato Sauce," but rather just some other hum-drum sauce.
Cook on medium until tomatoes are tender. Strain out all the skin chunks into another bowl.
In the same saucepan, saute over medium heat...
2 TBS of olive oil
Half a Large Onion, chopped
1 TBS Garlic, minced
Add Tomatoes
3 TBS Fresh Parsley, chopped
Reduce to low heat and simmer approx. 10 min.
Serve over pasta or add a little tomato paste for pizza sauce! Enjoy :o)
